If you have an abundance of cauliflower can I introduce you to the humble fritter?
Now this little recipe will win hearts and also be demolished by little people!
I am all for getting to the recipe so let's go!
What you will need:
2 cups of gluten free flour
1 cup parmesan cheese
salt and pepper
1/4 cup parsely chopped
1 clove garlic crushed
Boil your cauliflower until the stalks are soft. Make sure your cauliflower has been cut into bite size pieces.
Drain and allow to cool.
Add your remaining ingredients into a bowl and them once the cauliflower has cooled add to the mix.
In a fry pan drizzle olive oil and lightly fry on both sides. I use about a tablespoon amount.
Serve at room temp.
