I have a few salads that I prepare for my week ahead. This is one of them.
Pasta salads are great for meal prep as they last up to 3 days in your fridge.
Take a peek at this salad.
What you will need:
1 head of broccoli
1 /2 cups of pasta ( I use lello pasta )
1/3 cup walnuts chopped
1/3 cup f sunflowers
1 clove of garlic
sprinkle of chilli flakes
Boil your pasta following packet instructions.
In a baking tray place your seperated broccoli heads and drizzle with olive oil.
Bake for about 8/10 minutes in a 180.c oven.
In a frypan add a drizzle of olive oil then your walnuts, sunflower seeds, garlic and chilli flakes and lightly toast for 2 minutes.
Once your pasta is drained and broccoli is nicely baked toss them in a clean bowl together with your seed and nut mix drizzle with juice of half a lemon.
Salt to taste.
