Pea and ham soup
As a budget conscious mama I love nothing more than batch cooking.
Think minestrone soups, bolognase sauce and home made sausage rolls.
This is on the top of my budget list!
The humble pea and ham soup.
What you will need:
125 gms of pancetta or kasser bacon
1 cup of split peas
2 medium size pots
1 spring onion finely chopped
2 bay leaves
1 clove of garlic
1/2 tablespoon of butter
olive oil
salt and pepper to taste
Step one
In a medium size pot drizzle a small amount of olive oil.
Add your bacon and lightly fry off.
Add 500mls of water and gently simmer for about 15 minutes.
Set aside.
This will be your stock for the soup.
Step two
In a medium size pot add your butter, spring onion, 2 bay leave, garlic and a drizzle of olive oil.
Gently cook till spring onion is soft.
Add 3 cups of water and then your split peas.
then add the water from the pot you cooked your bacon removing the bacon prior to doin so.
cook for about 20 minutes checking your peas. They need to be soft.
Remove the bay leaf and using a stick blender blend till desired consistency is achieved.
chop up your bacon and serve as a garnish.
This soup costs about 3.50 per serve, or cheaper if you use normal bacon!
